Little Cut | An Evening with Bruce Alvarez

Little Cut is a bold and heartfelt culinary journey that blends creativity, culture, and community.

Written by Bruce Alvarez, this unique cookbook presents a nine-course tasting menu that celebrates Cuban flavors—think orange, pork, coffee, and mamey—woven into both original creations and cherished recipes. Each dish reflects a piece of Bruce’s story, from his heritage to his passion for making a difference. Inspired by his time as a teaching fellow and student leader at Breakthrough Miami, Little Cut is more than a cookbook—it’s a call to action.

Through food,Bruce shows how anyone can use their personal passions to raise awareness and contribute to causes they care about. With recipes ranging from simple to sophisticated, Little Cut invites everyone to the table, proving that purpose and flavor can go hand in hand. All proceeds from Little Cut will be donated to Breakthrough Miami.

Bruce Alvarez was born and raised in Miami, Florida, to Cuban parents. A graduate of Gulliver Preparatory School, he is currently a student at the University of Notre Dame. Bruce has always been passionate about education and community service, serving as a teaching fellow and later president of Breakthrough Miami at Gulliver. His experience with Breakthrough inspired him to create Little Cut, a cookbook that blends his love for cooking with his dedication to making a positive impact. Through this project, Bruce hopes to show how personal passions—like food—can be powerful tools for contributing to meaningful causes.

Breakthrough Miami uses a unique “students-teaching-students” model to create a rigorous, vibrant learning community, where highly motivated, traditionally underrepresented 5th-12th grade students are supported to achieve post-secondary success and emerging leaders are inspired to become the next generation of educators and advocates.
